As busy parents, finding the time to pack a healthy, delicious lunch for your kids can feel like a challenge. Between juggling work, school drop-offs, and other daily tasks, it’s easy to fall into the trap of repetitive same old boring sandwich or less nutritious options. However, with a bit of planning and creativity, you can pack lunchboxes that are both quick to prepare and full of the nutrients your kids need to power through their day.
Meal Prepping for Success
One of the best ways to save time on busy mornings is by meal prepping. Spend a bit of time over the weekend chopping veggies, cooking proteins, and assembling snack packs. Store them in airtight containers so they’re ready to grab and go during the week. For example, you can roast a batch of chicken breasts to slice and add to sandwiches or wraps, or prepare a variety of sliced fruits and veggies that can be easily packed into lunchboxes.
Allergy-Friendly Options
If your child has food allergies, it can be tricky to come up with safe and tasty lunch options. Look for recipes that can easily be adapted to be allergy-friendly. - Veggie-Packed Pasta Salad: Mix cooked pasta with diced bell peppers, cherry tomatoes, cucumbers, and a simple vinaigrette. Add a side of fruit and a small treat.

- Pack the lunches the night before if possible. Your mornings will go a lot smoother if there’s less to do, think about, and remember!
